An online friend told me the recipe has all the same ingredients as Shepherd’s Pie. I’ve never had SP, and probably never will, ‘cause I love this meal too much.
Slow Cooker Hamburger Casserole
We found this recipe in an old light/electric company newsletter years ago. I was in my late teens, or early twenties. (I’ll turn 60 in August.)
NOTE: I have never added too much salt to this recipe. I usually end up adding more salt to my bowl when eating. There have been a few times when I thought there was too much pepper though.
I put my onions on the bottom. This is because my slow cooker would turn the potatoes to mush. I also like to cut them big, and a bit thick.
I tend to cut my vegetables into big chunks. This way those who don’t like certain veggies can spoon them out into a clean bowl for others to take, or to add back into the pot. You could probably puree a handful of the veggies so that the picky eater isn’t even aware that they’re in there. I usually end up adding a little more veggies than the recipe calls for.
I like to add a can of whole kernel corn as well. I added green beans one time, but didn’t like them in there, so haven’t added them since. I don't drain the cans of corn/peas. I toss them in, liquid and all. (Which makes it more soupy.)
I add onion and garlic powder to the hamburger meat as it’s cooking, and Worcestershire/Worcester Sauce too. I love the aroma it fills the house with. I salt and pepper the meat after adding it to the top of the veggies. I use a 6 quart Crockpot, and with the extra veggies and 1/2 pound of hamburger meat, it’s quite full. (I go ahead and use two pounds of hamburger meat, since I’ve already added extra veggies.) (You could probably use one of those slightly oversized tomato soup cans too, though I’ve never had a problem with the flavor yet from using a regular sized can.)
I prefer to use tomato juice or diced tomatoes instead of water. I sometimes use a 14 ounce can of petite diced tomatoes. Mom sometimes used vegetable juice instead of water or tomato juice. I usually stir the pot after about three and a half hours. I want the tomato soup mixture to blend into the other liquids, adding its flavor to the mix. I always cook it on high.

I used one 14 ounce can of petite diced tomatoes. Mom sometimes used vegetable juice instead of water or tomato juice.
I stirred the pot after about three and a half hours. I wanted the tomato soup mixture to blend into the other liquids, adding it’s flavor to the mix. I cooked it on high. I cooked it for five hours to get the look that I wanted. The vegetables sink and the juices rise up.

2 large potatoes, sliced 2 or 3 medium carrots, sliced 1 (No. 2) can peas, drained 3 medium onions, sliced 1 & 1/2 lb. ground beef, browned 2 stalks celery, sliced 1 (10 oz.) can tomato soup 1 soup can water
Place layers of the vegetables in the order given in the slow cooker. Season each layer with salt and pepper. Put the lightly browned ground beef on top of the celery. Mix the soup with the water and pour into slow cooker. Cover and set on low for 6 to 8 hours (high 2 to 4 hours).
