I use Tuna instead of salmon to make patties. You can probably substitute salmon if you'd like. You'll probably have to tweak the ingredient amounts. I found a tuna patty recipe online that uses oat flour instead of crackers. I've not tried this yet ... I'll let you know if I go back to using crackers.
Tuna Patties
Ingredients:
1 can tuna salt, to taste 1 egg 1 cup rolled oats 1/2 cup cornmeal 2-3T oil
Directions:
1. Drain the oil/water from tuna can. Dump tuna into a large bowl. 2. Pour the cup of oats into a food processor and process for 2 minutes. Add half of the oat flour to the tuna bowl. 3. Add salt to the tuna bowl. 4. In a small bowl beat one egg and add it to the tuna bowl. Stir until well combined, then shape into four to six equal patties. 5. Add remaining oat flour to cornmeal and mix thoroughly before coating patties with it. (Can freeze patties for a few minutes to firm up before coating with oat flour/cornmeal mix.) 6. Heat oil over medium-high heat. Cook the patties for about 3-4 minutes on each side, or until golden brown. Place on a plate lined with a paper towel to drain.
