Growing up, our house used white cornmeal. At school, they used yellow cornmeal. When I moved out on my own, I bought both. A big bag of white, and a little bag of yellow. Because ... one day at school, I discovered that I loved the sweet, yellow cornbread with spicy chili. (They scrimped on the crackers, so I grabbed cornbread as an experiment ... and it worked!)
I rarely used the yellow cornmeal. Mostly as an additive to white cornmeal when I didn't have eggs. No yoke, so yellow cornmeal made it seem as if an egg had been added, color wise. And later on, I discovered I liked the yellow cornmeal added to white cornmeal and flour for fish fry. One cup of each added to a freezer bag and kept in the freezer until needed.
The other day I went to make cornbread to go with my meal, and discovered I was out of white cornmeal. All I had was yellow cornmeal. I made fried cornbread, and found I didn't like yellow cornbread with my dinner. So, here is the questions I'd like answered:
1) Vote: Which cornmeal do you use most often? Like the best?
2) If you like and use both, which cornmeal do you like with what dish? As I found I like the sweet, yellow cornbread with chili ... what foods have you found/discovered each cornmeal goes best with? Why?
3) What uses do you prefer for each cornmeal? What recipes do you feel brings out the best qualities of each cornmeal?
